I know what you’re thinking...cookies in the middle of summer? Yup. But in my defense, these cookies are amazing and I just couldn’t wait until the holidays to make them! They’re so addictive and simple to make. My friend and I usually eat about 6 each right when they come out of the oven!! Gather your besties and enjoy making these soft and sugary snickerdoodles!
What you’ll need:
Cookie dough:
- ½ cup of butter
- 1 cup sugar
- 1 egg
- ½ teaspoon vanilla extract
- 1 and ½ cups flour
- ¼ teaspoon baking soda
- ¼ teaspoon cream of tartar
Cinnamon-sugar coating:
- 2 tablespoons sugar
- ½ teaspoon cinnamon
Step 1: Get out all of your ingredients. Slightly soften the butter in the microwave or leave it out until it is room temperature. Start adding in the wet ingredients (butter, sugar, egg, vanilla) to your mixing bowl. Mix your dry ingredients (flour, baking soda, cream of tartar) in a separate bowl with a fork so there are no clumps. Once your wet ingredients are combined, add in the dry ingredients. Use your bowl scraper periodically to clean the sides of the bowl and mix until the dough is soft and no longer sticks to the bowl. Preheat your oven to 375° F.
Step 2: When your dough is done, prepare your cookie sheets and cinnamon-sugar coating. Place a piece of parchment paper (NOT wax paper...I've made that mistake before LOL) on the sheet and then prepare the cinnamon-sugar mixture by combining 2 tablespoons of sugar with ½ teaspoon of cinnamon. With a spoon, scoop out some dough and gently roll it between your palms until it forms a ball. These should be no larger than 1 inch in diameter. Roll the dough ball in the cinnamon-sugar mixture until it is fully coated. Place each dough ball on the cookie sheet about 1 and ½ inches apart from each other because they will flatten out in the oven. Each cookie sheet should hold 12 cookies.
Step 3: Once your oven is at 375° F, put one cookie sheet in at a time. Cookies should bake for 10-11 minutes, but I’ve found 10 minutes to be the magic number. Keep in mind that these cookies don’t really brown until they start to burn, so don’t be concerned if they look slightly under-cooked when they come out of the oven.
Step 4: After taking the cookies out of the oven let them set for a minute so they don’t break apart when you try to scoop them up. Use a spatula to transfer the cookies onto a cooling rack. It’ll be hard to resist eating them right away, but let them cool for at least 5 minutes!
Step 5: Finally! It’s time to enjoy these melt-in-your-mouth cookies. Pour yourself a cup of tea or glass of milk and prepare to be addicted to this yummy treat! Sharing with family and friends is recommended but totally optional ;)
