Welcome to Restaurant Re-Creations, the series where I make meals, desserts, and drinks inspired by some of my favorite restaurants! For the first installation of this series, I am taking inspiration from M Shack's delicious "Glorified Grilled Cheese". This sandwich has a very interesting combination of ingredients, such as avocado and jelly, but I am absolutely obsessed with this grilled cheese and I hope you enjoy it as much as I do!
What you’ll need:
- Loaf of Italian bread
- 1 ripe avocado
- Strawberry preserves
- 1 block of Colby Jack cheese
- 1 block of Pepper Jack cheese
- 1 large tomato
- 1 red onion
- 1 teaspoon apple cider vinegar
- ¼ teaspoon garlic powder
- 1 tablespoon brown sugar
- Butter
Step 1: First, we have to prepare the tomato relish. To do this, we must first peel the skin off of the tomato (it’s easier than it sounds I promise!) Boil about 2 to 3 cups of water in a small saucepan. Once the water has come to a gentle boil, remove it from the heat and gently place the whole tomato into the water. Stir it around to ensure that the entire surface of the tomato has been warmed in the water. Let it sit for about a minute and then carefully drain the water from the saucepan and place your tomato on a cutting board and let it cool slightly. Cut a small X on the bottom of the tomato just deep enough to cut the skin. Now, gently peel the skin off of the tomato. This step should be easy since the warm water softened the skin. Once the tomato has cooled off, dice it up and place to the side.
Step 2: Now it’s time to prepare the rest of the tomato relish! Dice up about ¼ of your onion and put your small saucepan on medium heat. Once the saucepan is warm, add in your diced onion and 1 teaspoon of apple cider vinegar. Stir occasionally until the onion becomes slightly soft and transparent. Then add in your diced tomato, 1 tablespoon of brown sugar, and ¼ teaspoon of garlic powder. Turn down the heat to low and let it simmer while stirring occasionally.
Step 3: While the tomato relish is simmering, prepare the ingredients for the grilled cheese. Slice up the two types of cheese as well as the avocado and place to the side.
Step 4: Heat up a large pan or griddle on low-medium heat. Generously butter the areas where the bread will go and place two pieces per sandwich. Place the slices of Colby Jack cheese on one piece of bread and then place the slices of Pepper Jack cheese on the other piece. Take a large spoonful of tomato relish and put it on top of the Colby Jack cheese. Put a spoonful of jelly on top of the Pepper Jack cheese and then cover the pan so that the cheese can melt. Once the cheese is melted, place a few slices of avocado on top of the tomato relish, and then carefully flip the other piece of bread on top. The bread should be nice and toasted on the outside and gooey on the inside.
Step 5: Plate the sandwich and slice it diagonally (it tastes better that way! Comment below if you agree). Take a few pictures for Instagram and then dig in!
Did you love it?! I could probably eat this grilled cheese every day! The sweetness of the jelly balances out the mild flavors of the tomato relish and avocado and it’s just perfect.
